Homemade Frozen Fudge Pops |

A great frozen treat! Ingredients:
1/4 cup cornstarch |
1/8 teaspoon salt |
3 cups milk or 3 cups half-and-half |
1/2 cup light corn syrup |
1 teaspoon vanilla extract |
1 cup milk chocolate chips |
vegetable oil cooking spray, for plastic cups |
12 disposable plastic cups (3-oz) |
12 wooden popsicle sticks |
Directions:
1. In a heavy-bottomed saucepan, combine the cornstarch and salt. 2. Gradually stir in milk (I prefer 1 cup half and half mixed with 2 cups whipping cream, so bottom of the pot will not scorch). 3. Stir in corn syrup and vanilla. 4. Bring to a boil; cook and stir for 1 min, or until thickened. 5. Reduce heat, stir in the milk chocolate chips until melted. 6. Pour in to cups (sprayed lightly with vegetable spray, I like Pam spray). 7. Cover each cup with heavy-duty foil; insert sticks through foil. 8. Place in a 13 x 9-in pan. 9. Freeze until firm. 10. Remove foil and cups before serving. |
