Homemade Falafel

A healthy alternative to oh so yummy authentic falafel. It's great wrapped up in a pita with fresh veggies and yogurt sauce, on a bed of greens or served as and appetizer.
Ingredients:
1 (14 1/2 ounce) can garbanzo beans, rinsed and drained
1 cup fresh parsley
1/2 cup onion, chopped
1/3 cup plain breadcrumbs
1 large egg
2 garlic cloves
1 tablespoon lemon juice
1 teaspoon cumin
1 teaspoon coriander
1/4 teaspoon salt
1 tablespoon olive oil
Directions:
1. Place all ingredients in except olive oil in a food processor and process until a paste is formed.
2. Heat oil over med-high heat.
3. Drop paste by rounded tablespoon into heat oil and flatten. Fry until golden brown on both sides.
