From Generations of Recipes, this looks like a cool way to make your own fresh egg noodles, adjusting for how much or little you need. It doesn't specify how much it yields, I'm going to guess 3-4 servings. Ingredients:
4 egg yolks |
3 tablespoons cold water |
1 1/2 cups all-purpose flour |
1 teaspoon salt |
Directions:
1. Sift the flour and salt together in a large bowl. 2. In another bowl, beat the egg yolks, and add the water. 3. Add the water-egg mixture to the flour, mixing with a fork, then by hand. 4. Knead to finish mixing. 5. Roll out thin-cut strips of desired width, and let dry slightly after cutting. Cook in boiling salted water for 6-7 minutes or until cooked to the desired consistency. |
