This is a wonderful homemade cornbread. Great with Chilli or hot soup! Ingredients:
1/2 cup bacon drippings or vege. oil |
1/2 cup flour |
1 1/2 cups cornmeal |
1 tbsp. sugar |
1/2 tsp. salt |
1/2 tsp. baking soda |
2 large eggs, lightly beaten |
1 1/2 cups buttermilk |
Directions:
1. Preheat oven to 400*. Pour bacon drippings into a 9 inch black iron skillet and heat in the oven for 3 to 5 minutes 2. In a large bowl combine the flour, cornmeal, sugar, salt, and baking soda. 3. In a smaller bowl, whisk the eggs and buttermilk together. 4. Add the wet ingred. to the dry and mix well 5. Pour the hot bacon drippings from the skillet into the batter and mix well. 6. Immediately pour the batter into the hot skillet and return to the oven 7. Turn the temp. down to 350* bake 40 to 45 minutes, or until browned. 8. Remove from the oven turn cornbread out onto plate to serve |
