Ingredients:
leftover chicken parts including backs, necks and bones
2 carrots, chopped
1 celery stalk, chopped
1 bay leaf
3 peppercorns
1 onion, peeled and halved
8 cups water
Directions:
1. In large pot combine chicken, carrots, celery, bay leaf, peppercorns, onion. Add water and bring to a simmer. Skim off fat forming at top. Cook for 2 - 3 hours. Strain. Freeze or refrigerate
