Ingredients:
leftover chicken parts including backs, necks and bones |
2 carrots, chopped |
1 celery stalk, chopped |
1 bay leaf |
3 peppercorns |
1 onion, peeled and halved |
8 cups water |
Directions:
1. In large pot combine chicken, carrots, celery, bay leaf, peppercorns, onion. Add water and bring to a simmer. Skim off fat forming at top. Cook for 2 - 3 hours. Strain. Freeze or refrigerate |
