These are warm blueberry filled waffles. With this recipe even the kids can get in on the action. 1 waffle: calories 282; Saturated fat 6g; Total fat 12g; Protein 8g; Carbs 35g; Fiber 1g; Sodium 418mg; Cholesterol 109mg Ingredients:
1 3/4 cups all-purpose flour |
2 tablespoons sugar |
1 tablespoon baking powder |
1teaspoon baking soda |
3 large eggs, separated |
2 cups reduced-fat sour cream |
1 cup low-fat (1%) milk |
1/4 cup unsalted butter - melted |
1 cup fresh washed blueberries |
1 teaspoon of vanilla extract |
Directions:
1. Preheat waffle iron 2. Into a large bowl, sift the flour, sugar, baking powder, baking soda, and salt 3. In a small bowl, with an electric mixer on high, beat the egg yolks, sour cream and milk 4. Stir in the dry ingredients with the butter 5. Fold in your blueberries and vanilla 6. In another clean small bowl beat your egg whites until stiff but not dry 7. Using a wire whisk, fold into the flour mixture just until the whites disappear 8. Bake waffles according to your waffle iron directions 9. If the batter becomes to thick add a little more milk |
