Homemade BBQ Chicken With Vegetables |

This recipe is a good way for us to get our children to eat their vegetables. Full of flavor and moist, the chicken turned out great. Ingredients:
2 lbs chicken (use any that you like) |
1 tablespoon extra virgin olive oil |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
1/2 cup chopped celery |
1/2 cup ketchup |
1/4 cup water |
1 1/2 tablespoons honey |
1 1/2 tablespoons tamari soy sauce (healthier soy sauce) |
1/4 teaspoon sea salt |
1/8 teaspoon pepper |
1 cup frozen corn |
Directions:
1. Pre heat oven to 350. 2. Brown chicken in olive oil in a skillet. 3. Put chicken in 13 x 9 baking dish, no need to grease. 4. Saute onions, green peppers and celery until tender. 5. Combine ketchup, water, honey, tamari sauce, salt and pepper in a bowl. 6. Add to vegetables and bring to a boil. 7. Pour over chicken. 8. Cover and bake for 25 minutes. 9. Sprinkle with corn and bake 25 minutes longer. 10. Make sure chicken is cooked thoroughly and serve. 11. Enjoy. |
