I've tried many banana pudding desserts with instant pudding, cream cheese, cool whip, etc. and some of them are very good, BUT...if it doesn't have homemade pudding it's just not Banana Pudding! LOL Here's my mom's version. Read more . I usually double this recipe. Ingredients:
1/3 c flour (scant) or 1/4 c corn starch |
2/3 c sugar |
2 c milk - scalded |
3 slightly beaten egg yolks |
2 t butter |
1/2 t vanilla |
nilla wafers |
2 very rip bananas |
Directions:
1. Mix flour (or corn starch) with sugar in med. stove top pot 2. In a small saucepan, scald milk (heat to almost boiling. watch crefully, milk will boil over immediately after reaching boiling temp). 3. Gradually add scalded milk to dry ingredients, mixing well 4. Cook over moderate heat, stirring constantly until mixture thickens and boils 5. Remove from heat 6. Add small amount of mixture to egg yolks and mix together 7. Add yolks to pudding mixture, return to heat and cook approximately 1 minute longer 8. Remove from heat, stir in butter and vanilla 9. Layer in glass casserole dish: wafers, sliced bananas, pudding, wafers, sliced bananas, pudding 10. Top with a few vanilla wafer crumbs |
