I've tried a lot of Mexican rice recipes over the years, and this is my current favorite. This can also be made into a gift mix. Ingredients:
2 1/2 cups water |
2 teaspoons chicken bouillon granules |
1 tablespoon dried onion |
1 teaspoon chili powder |
1/2 teaspoon cumin |
1/4 teaspoon garlic powder |
1/4 teaspoon paprika |
1 pinch cayenne pepper (to taste) |
1 1/4 cups rice |
2 tablespoons chopped fresh cilantro (optional) |
Directions:
1. Combine water, bouillon granules, onions and all spices in a 2 quart pot. 2. Bring to a boil and add rice. 3. Reduce heat to low, cover and cook until rice is tender and water is absorbed, about 20-25 minutes. 4. Remove from heat, stir in cilantro and serve. |
