Ingredients:
2 bay leaves, crumbled |
1 beef brisket (4-6 lbs), point cut |
1 tablespoon(s) black peppercorns, cracked |
1 tablespoon(s) dried thyme |
3/4 tablespoon(s) ground allspice |
1/2 cup(s) kosher salt |
1/2 tablespoon(s) paprika |
Directions:
1. trim and rinse brisket, pat dry 2. mix salt and seasonings in small bowl 3. spear brisket about 30 times per side with meat fork or metal skewer 4. place meat and seasonings in large zipper bag, squeezing out as much air as possible. 5. place in pan large enough to hold it, cover with 2nd pan and weight with 2 bricks 6. refrigerate 5 to 7 days, turning once a day |
