HOLY COW SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984. Ingredients:
5 whole habaneras seeded |
10 whole tomatillos husked and rinsed |
2 whole vidalia onions skinned |
6 whole sweet red peppers seeded |
2 whole smoked habaneras |
1 liter chipotle peppers |
1 tablespoon cumin |
2 ounces balsamic vinegar |
Directions:
1. Process ingredients in a blender individually in order listed until you reach dried peppers. 2. Pour into non-reactive container. 3. Place smoked habaneras and chipotles in blender. 4. Drain juice from mixture in bowl into blender and process. 5. Add to mixture in bowl then add cumin and stir well. 6. Drizzle vinegar over top then let marinate overnight |
