HOLLAND BRUNCH RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Craig Estate in Waxahachie, Texas in 1981. Ingredients:
1/2 pound sweet italian sausage |
1 cup sliced fresh mushrooms |
1 large carrot shredded |
1/2 cup sliced green onions |
4 eggs beaten |
1/4 cup milk |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
3 cups cooked rice |
1/4 cup grated parmesan cheese |
Directions:
1. Cook sausage in large skillet over medium heat until browned. 2. Drain and return meat to skillet then add mushrooms, carrot and onions. 3. Cook 2 minutes. 4. Combine eggs, milk, salt and pepper in small bowl. 5. Reduce heat to medium then pour egg mixture over vegetables. 6. Cook stirring for 2 minutes then add rice and cheese stirring to separate grains. 7. Heat 2 minutes then serve immediately. |
