We all have a great yam recipe for our holiday buffet. This one is one we have made for years and years and it never fails us. Enjoy Ingredients:
40 ounce can yams drained |
8-1/2 ounce can crushed pineapple and juice |
2 tablespoons light brown sugar |
2 tablespoons butter melted |
3 tablespoons chopped pecans |
3/4 cup miniature marshmallows |
Directions:
1. Drain yams and mash well. 2. Drain pineapple reserving juice. 3. Add juice to yams, sugar and butter then beat well. 4. Stir in pineapple and pecans. 5. Coat inside of casserole dish with non-stick cooking spray. 6. Spoon in yam mixture and bake at 350 for 20 minutes. 7. Remove from oven and sprinkle with marshmallows then bake 10 minutes longer. |
