Holiday Roasted Pepper Spread |

This was in the Dallas Morning News. Source if Barton Creek Resort & Spa Times do not include roasting red peppers. You can use jars of roaste red bell peppers. Ingredients:
2 cups roasted red peppers, peeled and seeded, diced small |
6 ounces chevre cheese |
16 ounces cream cheese |
1/2 cup shallot, minced |
2 tablespoons garlic, minced |
1/2 cup fresh cilantro |
1/4 cup lime juice |
1 cup yogurt |
Directions:
1. Puree roasted red bell peppers. Mix cheeses until soft. Gradually combine all ingredients until completely incorporated with cheese. 2. Chill until firm and serve with crackers or rustic bread. |
