The combination of cranberries and orange brings a refreshing taste to the familiar turkey sandwich. If you prefer, use jellied cranberry sauce for a smoother texture and less complex flavor. These make a great finger-food treat for kids. Ingredients:
1 cup (4 ounces) shredded monterey jack cheese |
8 (8-inch) fat-free flour tortillas |
2 cups shredded cooked turkey (about 8 ounces) |
1 cup cranberry-orange crushed fruit (such as ocean spray) |
Directions:
1. Sprinkle 1/4 cup cheese over each of 4 tortillas; top each with 1/2 cup turkey, 1/4 cup fruit, and 1 tortilla. Heat a large nonstick skillet over medium-high heat. Place 1 quesadilla in pan; cook 5 minutes on each side or until tortillas are crisp. Set aside and keep warm. Repeat procedure with remaining quesadillas. Cut each quesadilla into 6 wedges. |
