We serve it every year around the holidays, it is always a big hit. Great for co-workers Ingredients:
3 1/4 cups flour |
1 teaspoon baking powder |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
3 cups sugar |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
4 eggs |
1 cup vegetable oil |
1 (20 ounce) can pumpkin |
1 cup canned mincemeat |
1 1/2 cups pecan pieces |
Directions:
1. Combine flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg in mixing bowl. 2. Blend in eggs, oil, pumpkins and mincemeat. 3. Stir in nuts by hand. 4. Then pour into 5 greased and floured 7 x 3 1/2 bread pans. 5. Bake at 350 until bread is golden brown on top and passes the toothpick test. 6. Average 50 min and less time for smaller pans. |
