Great for a holiday or even everyday meal. Nice thing is can be made day before just bring to room temp before baking. Ingredients:
3 pounds potatoes, peeled and cubed (i prefer to use a combination of red and white potatoes) |
1/4 cup onions, chopped |
8 ounces cream cheese, cubed |
1/4 cup butter, softened |
1/2 cup milk |
2 eggs, beaten |
1 tsp salt |
fresh chives, chopped |
Directions:
1. Cook potatoes and onion in boiling water until tender, drain. 2. Add cream cheese, butter, and milk. 3. Beat until combined with a mixer and add eggs and salt. 4. Continue to mix until potatoes are fluffy. 5. Pour into greased casserole dish, top with chopped fresh chives 6. Bake 45 minutes at 350 degrees. |
