This is my Mom's recipe for Gumdrop cake that she use to make, It is a family favorite. Easy to make. She always left the gumdrops whole or used the small spiced gumdrops. Ingredients:
1 cup butter |
2 eggs |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 1/2 cups applesauce |
1 teaspoon baking soda (dissolved in a little hot water) |
1 1/2 lbs gumdrops |
2 cups sugar |
4 cups flour |
1/4 teaspoon salt |
1 cup raisins |
1 cup nuts |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 325 degrees. 2. Grease and flour Bunt or angle food cake pan. 3. Cream butter add eggs and sugar. 4. Mix applesauce, soda, nutmeg and cinnamon together. 5. Add to butter and egg mixture. 6. Add gumdrops, nuts to flour and salt. 7. (Mix to dredge). 8. Add the flour-salt-gumdrop-nut mixture, mix thoughly. 9. Pour into prepared pan and bake 1-1/2 hours. |
