Ingredients:
3 cups sugar |
1 cup light corn syrup |
1 1/2 cups half-and-half |
1 1/2 teaspoons vanilla extract |
1/2 pound candied cherries, coarsely chopped |
1/2 pound candied pineapple, coarsely chopped |
1 3/4 cups chopped pecans |
1 3/4 cups chopped walnuts |
1 3/4 cups chopped brazil nuts |
Directions:
1. Combine sugar, syrup, and half-and-half in a 3-quart saucepan. Bring to a boil, stirring until sugar dissolves. Cook over medium heat, stirring occasionally, until mixture reaches soft ball stage (238°). 2. Remove from heat; beat at medium speed of an electric mixer 8 minutes or until mixture thickens. Stir in vanilla, candied fruit, and nuts. With buttered hands, divide mixture into 7 equal portions. Shape each portion into an 8-inch log. Wrap each log in waxed paper; chill thoroughly. Remove waxed paper, and cut each log into 1/4-inch-thick slices. Store in airtight containers in refrigerator. |
