Holiday Coconut Macaroons |

These are moist & chewy - a pretty addition to any cookie platter. Ingredients:
4 egg whites |
2/3 cup sugar |
1/4 cup flour |
1/8 teaspoon salt |
1/2 teaspoon almond extract |
4 cups coconut |
1/4 cup chopped glace red cherries |
1/4 cup chopped glace green cherries (or use 1/2 cup of glace mixed fruit instead of the cherries) |
Directions:
1. Preheat oven to 325F degrees. 2. Grease& lightly flour cookie sheets. 3. In medium bowl, beat egg whites until foamy. 4. Add sugar, flour, salt& almond extract; blend well. 5. Stir in coconut& cherries (or fruit mix). 6. Drop tablespoons onto cookie sheet, approximately 2 inches apart. 7. Bake 13-17 minutes or until set& lightly browned. 8. Immediately remove from cookie sheets& cool completely. |
