Cauliflower Ingredients:
1 large head cauliflower |
1 (4 oz.) can sliced mushrooms |
1/4 c. diced preen pepper |
1/4 c. butter |
1/3 c. milk |
1 tsp. salt |
1 c. shredded swiss cheese |
2 tbsps. chopped pimento |
Directions:
1. Break cauliflower in medium-size flowerettes; cook in boiling water until crisp-tender, about 10 minutes. 2. Drain well; set aside. 3. In a 2 quart sauce pan, saute mushrooms and green pepper in butter until tender. 4. Blend in flour. 5. Gradually stir in milk. 6. Cook, stirring conatantly, over medium heat until mixture is thick. 7. Stir in salt, cheese and pimento. 8. Place half of the cauliflower in a buttered 2 quart casserole. 9. Cover with half of the sauce; add remaining cauliflower. 10. Top with sauce. 11. Bake at 325 degrees for 15 minutes. 12. Makes 8 servings. |
