I make this at the holdiays or anytime I want a colorful side dish. A little bit different from traditional cauliflower in cheese sauce. Ingredients:
1 large head cauliflower, broken into florets |
1 can mushrooms, drained |
1/4 cup green bell pepper, diced |
1/4 cup butter |
1/3 cup all-purpose flour |
2 cups milk |
1 teaspoon salt |
1/4 teaspoon cayenne pepper |
1 cup cheddar or swiss cheese, shredded |
2 tablespoons pimento, diced |
Directions:
1. Cook cauliflower in boiling salted water just until tender-crisp. Drain. 2. In large skillet, saute mushrooms and green pepper in butter. 3. Blend in flour. Cook until bubbly. 4. Gradually stir in milk. 5. Cook until thickened. 6. Stir in salt, cayenne, cheese and pimento. Stir until cheese is melted. 7. Arrange half the caullflower in bottom of greased 2 quart casserole. 8. Cover with half the sauce. 9. Repeat. 10. Bake at 325 degrees for 20 minutes or until bubbly. |
