Holiday Broccoli Casserole |

Great side dish. Ingredients:
1 lb broccoli, cut into pieces |
1 (10 3/4 ounce) can cream of mushroom soup |
2 large eggs |
1 cup mayonnaise |
1 1/2 cups shredded cheddar cheese |
1/2 cup salted butter |
4 ounces ritz crackers, crushed (1 sleeve) |

Directions:
1. Preheat oven to 350 degrees. 2. Steam broccoli for about 7 minutes and transfer to a bowl of ice water. 3. Mix soup, eggs, mayonnaise, cheese, butter, and pepper in a sauce pan and cook over medium/low heat, stirring constantly, until melted and combined. 4. Drain broccoli and spread evenly in a greased 9x13 pan. Pour cheese mixture on top. Top with crushed Ritz crackers and bake for 30 minutes. |
