A spicy breakfast or brunch dish to welcome, and jump start the day. It is festive, and a good choice for the holidays. Ingredients:
6 6-inch flour tortillas |
!-1/2 pounds lean mild sausage |
1 cup chopped onions |
1 clove garlic, minced |
1 teaspoon dried oregano, crushed |
1 teaspoon ground cumin |
1 teaspoon ground red |
1/2 teaspoon salt |
2 cups shredded monterey jack cheese (8 ounces) |
8 eggs |
2-1/2 cups milk |
1 4-ounce can diced mild green chili peppers, drained |
1 cup sour cream |
chopped tomatoes, sliced green onions, shredded lettuce, sliced ripe olives, and salsa |
Directions:
1. Lightly grease a 13 x 9 x 2-inch baking dish. 2. Line dish with tortillas, cutting to fit 3. In 10 inch skillet, cook sausage, onion, and garlic over medium heat; drain 4. Stir in oregano, cumin, red pepper, and salt 5. Spoon sausage mixture into tortilla-lined dish 6. Sprinkle with cheese 7. Preheat oven to 350 degrees. 8. In large bowl, beat eggs and milk until well blended 9. Stir in green chili peppers 10. Pour egg mixture over sausage and cheese 11. Bake about 45 minutes or until a knife inserted near center comes out clean 12. Let stand 5 minutes 13. Spread with sour cream 14. Top with tomatoes, onions, lettuce, and olives 15. Serve with salsa 16. NOTE: Can decrease the amount of cheese for a lighter dish |
