Hoisin Chicken and Broccoli Stir-Fry |

Ingredients:
1 tablespoon vegetable oil |
cooking spray |
1/3 cup fat-free, less-sodium chicken broth |
3 tablespoons hoisin sauce |
2 tablespoons dry sherry |
2 tablespoons orange juice |
1 teaspoon cornstarch |
2 teaspoons bottled minced garlic |
2 teaspoons bottled minced fresh ginger |
1/2 teaspoon sesame oil |
1 pound chicken breast tenders |
3 cups bagged broccoli florets |
1 (8-ounce) can whole water chestnuts, drained |
Directions:
1. Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Combine broth and the next 7 ingredients (broth through sesame oil). Add chicken to pan, and sauté 2 minutes. Add broccoli, and sauté 5 minutes. Add chestnuts, and sauté 2 minutes. Add broth mixture, and cook 1 1/2 minutes or until sauce is slightly thick, stirring constantly. |
