Hoisin and Lime-Marinated Grilled Chicken |

Save two breast halves from this dish to use later as a salad topping, tossed with rice noodles, or in Broccoli and Chicken Stir-Fried Rice. Serve with grilled pineapple rings. Ingredients:
1/4 cup hoisin sauce |
1 tablespoon grated peeled fresh ginger |
2 tablespoons low-sodium soy sauce |
1 teaspoon grated lime rind |
2 teaspoons dark sesame oil |
1/2 teaspoon kosher salt |
8 garlic cloves, minced |
6 (6-ounce) skinless, boneless chicken breast halves |
cooking spray |
Directions:
1. Combine hoisin sauce, ginger, and next 5 ingredients (through garlic) in a large zip-top plastic bag. Add chicken to bag; seal. Marinate in refrigerator for 2 hours, turning bag occasionally. 2. Prepare grill. 3. Remove chicken from bag; discard marinade. Place chicken on grill rack coated with cooking spray, and grill for 5 minutes on each side or until chicken is done. |
