                    Purely southern hoecake. Batter will keep for 2 days in refrigerator Ingredients: 
                    
                        
                                                1 cup self rising flour  |  
                                                1 cup self rising cornmeal  |  
                                                2 eggs  |  
                                                1 tab. sugar  |  
                                                3/4 cup buttermilk  |  
                                                1/3 cup +1 tbs. water  |  
                                                1/4 cup bacon grease or veg. oil  |  
                                                butter  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Mix all ingredients except for oil and mix well. 2. Heat frying oil or butter in large skillet over medium heat 3. Drop the batter by spoonfulls into skillet (approx. 2 Tbs. per hocake) 4. Fry each till brown and crisp, turn with a spatula and then brown other side 5. With slotted spoon, remove each cake and drain on paper towel                              |
