This is one of Paula Deen's boys recieps but I remember my grandpa making them for me when I was a child. I never had a recipe because he just made them . Now my boys can enjoy them and have another good food memory from their childhood. Ingredients:
1-cup self rising flour |
1-cup cornmeal |
2-large eggs |
1-tbspn sugar |
pinch of slat |
1/4-cup buttermilk |
1/3-cup + 1-tbspn water |
1/2-stick unsalted butter, melted |
oil for frying (i use canola but the recipe called for vegetable oil or butter) |
Directions:
1. Mix together all the ingredients except the oil 2. Heat the oil for frying and drop 2-tbspn of batter into skillet for each cake. 3. Cook cakes about 2 minutes then flip and cook 1 more minute on other side. 4. Drain on paper towel 5. Serve hot with honey or syrup 6. (Makes 15 cakes) 7. -Susana |
