A nice alternative to regular pancakes! Ingredients:
1 1/2 cups cornmeal |
1/2 cup all-purpose flour |
1/4 cup vegetable oil |
1 1/3 cups buttermilk |
1/3 cup sugar |
2 eggs, beaten |
1 teaspoon baking soda |
1 teaspoon salt |
Directions:
1. Mix cornmeal, flour, sugar, baking soda and salt. Add eggs, vegetable oil and buttermilk. Stir briefly, just until mixed lightly. 2. Pour 1/4 cup of batter onto a oiled skillet. Fry over medium-high heat for one to two minutes, or until golden brown on each side. Repeat oiling of skillet in between batches of hoecakes to keep them from sticking. Serve right away. |
