You go'n to luuuuv these Hoe Cakes huuuunny! So jus' how do you like my cakes? The devil made me do it! (in my best Geraldine impersonation) Ok...ok not that kind of hoe, It gets its name from the way it was originally cooked. Ingredients:
2 cups cornmeal |
1 tsp salt |
1tbs sugar |
1 cup scalded 1 percent fat milk |
Directions:
1. Into a mixing bowl, sift together cornmeal with salt and sugar. 2. Moisten the cornmeal with enough milk to give it the texture of thick pan cake dough. 3. Note if it is too runny allow it to sit for 1 hour. 4. Drop the batter on a hot well-greased griddle. 5. Spread it out to make a round cake about 1/2 inch thick. 6. Cook over low heat for 15 minutes, until bottom is well browned. 7. Turn over and cook the other side for anouther 12 minutes. |
