I don't know who came up with the colorful name for this recipe (from an old church cookbook), but it's sort of like sloppy joes with more substance and not in a sandwich. Served on Fritos and topped with shredded lettuce, cheese, and ranch dressing. It's not fancy, but it is a tasty and easy to prepare home-cookin' dish. Ingredients:
1 lb ground beef |
1/2 onion, chopped |
1 (6 ounce) can tomato paste |
1 (8 ounce) can tomato sauce |
2 cups water |
2 tablespoons sugar |
2 garlic cloves, minced |
1 teaspoon accent seasoning |
1 teaspoon oregano |
1 teaspoon cumin |
1 teaspoon salt |
1/4 cup white rice |
0.5 (15 ounce) can kidney beans, drained |
fritos corn chips |
shredded lettuce |
shredded cheddar cheese |
ranch dressing |
Directions:
1. Cook and drain beef. 2. Add all other ingredients except toppings (last 4 ingredients). 3. Simmer until rice is tender, about 20 minutes. 4. To serve, place a handful of Fritos on plate, ladle meat sauce over Fritos, and top with lettuce, cheese, and Ranch. |
