I've made this dish for several years, it came from one of my 5-ingredient-or-less cookbooks. Even my picky-eater kids (and DH!) like it. It has a bit of a spicy kick so you could use plain diced tomatoes instead of tomatoes with chiles if you prefer a milder taste. I'm posting it here for safe keeping. Ingredients:
1 lb ground beef |
1 onion, chopped |
3 (10 3/4 ounce) cans minestrone soup |
2 (15 ounce) cans ranch style beans |
1 (10 ounce) can tomatoes, with chiles |
Directions:
1. Brown ground beef and onion together; drain. 2. Combine all ingredients in a slow cooker; heat on low for 8-10 hours stirring occasionally. 3. *Note: I've used both condensed minestrone soup and non-condensed (like Progresso). If using condensed I add about 1 soup can of water. |
