Hobo Spuds-(Wisconsin Style)

This first recipe and soon to be a series of HOBO Recipes were hatched on a few camping trips in the last few months. My Grandson's family love to camp and usually invite or allow me to go along. This is Maxie my Chili Cook Off partner. This past spring we sat around camp crackin' jokes about Bumpa , that's me , how I usually show up with very little gear or equipment. Well, homeless meals, Hobo cooking in Tin Cans, Katrina disaster cooking, Tin Foil goodies, etc, we decided to put some of these recipes to paper. Never did, so doing now! This first recipe is so simple it can not been screwed up! Well, maybe so! Here we go.
Ingredients:
2 tablespoons lard or 2 tablespoons crisco
1 (12 ounce) can spam
2 (15 ounce) cans whole potatoes
4 slices cheese
1 small onion (optional)
Directions:
1. Slice spam in half, slice into length strips about 1/4 square X 2 .
2. Build fire so you have hot coals, add lard to fry pan until sizzles, add Spam, brown Spam until dark brown or jumps around in pan like Mexican Jumping Beans , Drain and set aside.
3. Add drained whole potatoes that have been partially crumbled in the can.
4. Fry until golden brown on both sides. Add Spam back onto potatoes.
5. Chop the onion, add on top potatoes and Spam, cover with cheese. Cover and let set by fire for a few minutes to melt the cheese.
