These Poatoes are on the order of O'Brian Potates, but Much, Much Better!!!! They are a Must when we Grill, and are Gone so Fast Ingredients:
2 cups cubed potatoes |
1 cup chopped onion |
1 cup thinly sliced carrots |
1/2 cup diagonally sliced celery |
2 tablespoons water |
salt & pepper to taste |
8 slices of crisply cooked bacon |
2 tablespoons butter |
Directions:
1. Prepare Charcol for Grilling. In 3 Quart Casserole Combine: Potatoes, Onions, Carrots, Celery, & Water. Cover with Plastic Wrap. 2. Microwave on HIGH for 5 to 6 Minutes, or until Vegetables are Hot & just beginining to cook stirring once during cooking. Drain, then Salt & Pepper. Place Potato Mixture on a 8 x 18 inch Square of Heavy Duty Foil, Top with Bacon, & Dot with Butter. Wtap Securely with a Double Seal. 3. Immediately place on Grill 4 - 6 inches from Medium High Coals. 4. Cook 25 to 30 Minutes or until Vegetables are Tender |
