This is an excellent recipe for tea since the slices are small and just the right amount for a light snack. I found this recipe in the Express community cookbook, Keep the fires burning. Ingredients:
3 3/4 cups raisins |
1 1/2 cups hot water |
4 teaspoons baking soda |
1/4 cup butter |
1 1/2 cups brown sugar |
1 1/2 cups white sugar |
2 teaspoons vanilla |
1 pinch salt |
4 cups flour |
2 eggs, beaten |
Directions:
1. Place raisins in large bowl add hot water. 2. Stir in baking soda. 3. Add butter and sugars, mix well. 4. Add vanilla, salt,flour and eggs and mix well. 5. Pour batter into greased, floured 19 ounce tins. 6. Fill half full. 7. Bake in 350 oven for about 45 minutes. 8. Cool upside down. 9. Makes 4 loaves. |
