Ingredients:
1 (3 to 4-pound) whole chicken, cut into pieces |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 cups all-purpose flour |
1 teaspoon salt |
1 teaspoon baking powder |
1 cup milk |
1 egg |
butter/flour roux, 50/50 |
salt and freshly ground black pepper |
Directions:
1. Dumplings: 2. In a large pot, cover chicken with water, add salt and pepper. Bring to a boil and let simmer for about 40 minutes until cooked through. Let cool and remove chicken from bones. 3. To make the Dumplings: 4. Once the chicken is cooked, in a mixing bowl, add flour, salt, and baking powder and mix well. Add milk and egg and combine well with a fork. Drop into boiling chicken broth and simmer, covered, for 10 to 15 minutes. Add a butter/flour roux to thicken the broth. Add salt and pepper, to taste.
