Hippie Potato Salad

I love this fun potato salad. I think using yogurt gives it a very fresh taste.
Ingredients:
6 medium potatoes
2 chopped hard-cooked eggs
2 medium tomatoes, diced
1 chopped red or green bell pepper
2 chopped scallions
1 chopped cucumber
chopped fresh parsley
1/2 cup sliced black olives
1/2 cup sunflower kernels or chopped cashews
3/4 - 1 cup of plain yogurt
a splash of apple cider vinegar
1/2 tsp dry mustard
1/2 tsp tarragon.
Directions:
1. Scrub the potatoes, boil until tender and chop into bite-sized pieces. I like to leave the peels on. Combine all ingredients and serve on spinach leaves.
