From Captain Murrell's Savory Seafood Recipes cookbook. Ingredients:
1 herring fillet, salt |
1 cup beet, cooked, diced |
1 cup carrot, cooked, diced |
1 cup potato, cooked, diced |
1 cup apple, diced |
1/2 cup cucumber, diced |
1 tomato, cut in small pieces |
2 onions, small, diced |
6 lettuce leaves, large |
1 cup sour cream |
1/4 cup vinegar |
1/4 cup juice, beet, for coloring to your liking |
Directions:
1. Soak salt herring in cold water in partially freshen. Remove skin and bone and cut into bits. Do not cook. Add beets. carrots, potatoes, apple, cucumber, tomato, and onion to herring. Toss gently. Place lettuce in a large plate or on individual salad plates. Prepare a dressing by combining sour cream, vinegar and beet juice. Place dressing in individual serving dishes; do not mix with salad. |
