A New Zealad recipe Ingredients:
125 g butter |
1 teaspoon cocoa |
125 g sugar |
1 cup mixed fruit |
100 g glace red cherries |
1 egg, beaten |
250 g biscuits, crushed |
1 teaspoon vanilla |
2 cups icing sugar |
50 g butter |
1 lemon, juice and zest of |
Directions:
1. Place butter, cocoa and mixed fruit in a saucepan and bring to the boil over a moderate heat. 2. Add the egg whilst whisking and boil for another two minutes. 3. Remove pan from the heat and add biscuits, vanilla and halved cherries. 4. Press mixture into a lamington tin and let cool. 5. Mix together the icing sugar, melted butter and lemon zest, add enough juice to make a smooth icing, spread over the slice then chill. |
