3 strips thick bacon |
3lbs. lean beef (coarse grind) |
1 medium onion (chopped fine) |
3 medium cloves garlic (minced) |
1 can (6 oz.) tomatoes paste |
3tbsp. ground cumin |
1tbsp. ground oregano |
1 tbsp. salt |
1 tbsp. ground black pepper |
1 bottle (12oz.) beer (dark mexican beer is the best) |
6 to 9 dried red chili pods |
3 cups water |
Directions:
1. In large, cast iron kettle, fry bacon strips. Remove, saving grease. Add meat, onion, and garlic and sauté in bacon grease until meat is gray. 2. Stir in tomatoes paste, then add spices and mix well through meat. 3. Pour in beer. Stir thoroughly and remove from heat. 4. Remove stems and seeds from dried chili pods. Boil in a covered saucepan with water for 15 minutes. 5. Put peppers and water into blender and blend into a thick sauce. Pour sauce into kettle with meat, stir and simmer for two hours. 6. Check after 1 1/2 hours. If chili needs thickening, add Tablespoon of Masa Harina. 7. If Chili is too thick, add water sparingly. For hotter chili, add cayenne or Tabasco sauce - sparingly |
