My mom used to make these all the time for an afterschool snack, but she got it from a 1930's church cookbook. The basic recipe makes a nice simple sweet when eaten alone, but the possibilities are endless. I've mixed in chocolate chips, or dried fruit to make more of a granola bar. It is also nice served warm with ice cream. Ingredients:
1/2 cup butter, melted |
1 cup brown sugar |
2 cups oatmeal |
1/8 teaspoon salt |
1 tablespoon baking powder |
Directions:
1. Preheat oven to 350. 2. In a medium sized microwave safe bowl, melt butter. 3. Mix in brown sugar. 4. Add oatmeal, salt and baking powder. 5. Press into an 8x8 baking dish. 6. Bake for 15 - 20 minutes. 7. Let cool before cutting into squares. |
