Makes 6 regular sized muffins, or 4 large or 12 bite-sized. Each 120-calorie serving has: Fat 3.7g Saturated Fat 0.6g Total Carbohydrates 13.4g Dietary Fiber 2.3g Sugars 6.3g Protein 8.0g Ingredients:
1/2 cup oats |
1/2 cup liquid egg whites |
1 scoop pro performance 100% whey protein vanilla |
2 t splenda brown sugar |
2 t ground flax seeds |
2 t wheat bran |
2 t semi sweet chocolate chips |
2 t chopped walnuts (or seeds) |
1 t chopped dried apricots |
1 t craisins |
1/2 tsp of baking powder |
1/4 tsp salt |
Directions:
1. Combine all ingredients in a mixing bowl. 2. Coat muffin tin with cooking spray. 3. Divide mixture evenly among muffin cups. 4. Cook for 15-18 minutes for regular sized muffins. 5. Enjoy before or after a workout! |
