Delicious chicken salad for a sandwich, to eat on crackers or just on a plate. Ingredients:
4 oz chicken breast |
2/3 c chickpeas |
1 oz classic romaine salad |
3 tbs miracle whip free |
1 1/2 oz catalina free |
1/4 tsp seasoned salt |
Directions:
1. Cook boneless chicken breast thoroughly. You can boil, put on grill or (as I do) cookon electric grill (Foreman) Cut chicken, chickpeas and salad into TINY pieces. I use a chopper to make them small enough. Shake two small shakes of seasoned salt into mixture and mix thoroughly. Add Miracle Whip and Catalina to the mixture and stir well to make sure ALL pieces are completely coated with the dressings. I put it on Reduced fat wheat thins or triscuits after first putting a thin coat of Laughing Cow Light cheese. |
