Made this not long ago. Tastes good and is not sinful! :P It's just a little troublesome to get all the ingredients though...(: Ingredients:
2 egg whites |
125ml skim milk |
1/4 cup plain low-fat yoghurt |
2 tablespoons orange juice |
2 tablespoons grated apple |
juice and rind of 1/2 a lemon |
2 tablespoons currants |
2 tablespoons sultanas |
6 prunes (chopped) |
1 1/2 teaspoon baking powder |
5 rounded tablespoons wholemeal flour |
75g rolled oats |
1/2 teaspoon cinnamon |
1/4 teaspoon allspice |
Directions:
1. Preheat oven to 190 deg C. 2. Lightly beat the egg whites 3. Add milk, yoghurt and juice 4. Add grated apple, lemon juice and rind, currants, sultanas and prunes to mixture. Combine well. 5. Mix together the flour, rolled oats, baking powder and spices in a seperate bowl. 6. Add the dry mix to the wet mix. 7. Spoon into muffin pans and bake for 25 minutes. |
