A delicious and light rice side dish, ready in 30 minutes Ingredients:
1 c. long grain rice, raw |
1/2 c. finely chopped red onion |
1/3 c. shredded carrot |
1 ounce ranch dressing mix |
1 can chicken broth, 99% fat free |
2 tbsp. water |
Directions:
1. Saute rice, carrot and onion in large pan approx. 6 minutes until slightly browned(spray pan with cooking spray) 2. Add broth and hidden valley ranch dressing mix, and water. 3. Stir and bring to a boil. 4. Pour into 2 qt. casserole dish(sprayed w/cooking spray) 5. Bake for 30 minutes at 350 |
