My husband made this beef dish for dinner last night & I couldn't help but steal it off of his plate. Ingredients:
3/4 lb beef stew meat, cut into bite size |
2 tablespoons olive oil |
1/4 onion, grated |
1 tablespoon dried parsley flakes |
1/2 teaspoon paprika |
1/2 teaspoon ground ginger |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/2 cup water |
1/2 teaspoon paprika |
1 small beef bouillon |
1 small tomato, diced very small |
1/4-1/2 cup water |
Directions:
1. Heat the oil in a skillet then add the beef, onion, parsley, 1/2 tsp paprika, ginger, salt, & pepper. Saute over medium heat for 10 minutes. 2. Stir in 1/2 cup of water, 1/2 tsp paprika, & bouillon. Cover with a lid & simmer for additional 10 minutes. Stir occasionally. 3. Uncover, add the last of the water & diced tomato. Recover & continue to simmer for 15 minutes, stirring occasionally. 4. Serve over couscous or by itself with bread. |
