Hiccup or Jicama either way excuse this sweet mess. Ingredients:
----- the slaw |
2 cups cabbage shredded |
1 medium jicama grated |
1 large carrot grated |
1 large apple grated |
----- the dressing |
1/2 cup mayonnaise |
1/2 cup greek yogurt |
1 tbsp dijon mustard |
1 tbsp prepared horseradish |
4 tbsp honey |
4 tbsp rice vinegar |
1/4 cup apple cider |
1/2 tsp cardamom |
1/2 tsp chili powder |
1 tsp kosher salt |
Directions:
1. It is a wondrous coincidence that 1 bag of cole slaw mix from the salad section is exactly 2 cups of cabbage shredded. This is a big time saver and made me very happy. 2. Toss the veggies together well. 3. Blend all the dressing ingredients together. 4. Pour the dressing over the veggies and thoroughly blend. 5. Let chill for at least 4 hours before serving. 6. Makes 6 cups and my belief is that a 1/4 cup serving is adequate. |
