This is from a Hungry Girl email that I received this morning. The email was all about Egg Beaters. Ingredients:
1/2 cup egg beaters southwestern egg substitute, with yolk |
1 small high-fiber flour tortilla |
1 ounce fat-free cheddar cheese, shredded |
1 tablespoon salsa |
1 tablespoon nonfat sour cream |
Directions:
1. Bring a small pan sprayed with nonstick spray to medium heat. Pour in Egg Beaters and scramble while you cook. 2. Once cooked, top with cheese, reduce heat and cover. Cook for 1 minute longer to melt the cheese. 3. Meanwhile, toast tortilla until crispy. Top tortilla with cheesy scramble. Finish it off with salsa and sour cream. Enjoy! :-). |
