Ingredients:
1/2 cup egg beaters egg substitute
2 tablespoons bacon (pre-cooked and crumbled)
1/3 cup tomato, chopped, patted to remove excess moisture
1/4 avocado, diced
2 tablespoons salsa
salt
pepper
Directions:
1. Spray large microwave safe mug with nonstick spray.
2. Add egg beaters; microwave 1 minute.
3. Gently stir. Add bacon and tomatoes. Microwave 1 minute.
4. Season with salt & pepper.
5. Top with avocado & salsa.
