If it's spinach, it must be good! Easily veganized with appropriate substitutions; I also sometimes nix the cereal and use a mixture of half wheat bread crumbs/ half ground flax seeds, increases the fat content but its good Omegas. Ingredients:
one 10-oz . package frozen chopped spinach, defrosted and thoroughly patted dry |
1/2 cup finely chopped onion |
1/3 cup fiber one all-bran cereal (original) |
1/4 cup reduced-fat parmesan cheese |
1/4 cup fat-free liquid egg substitute |
3 tablespoons fat free cream cheese, room temperature |
1 tablespoon light margarine |
3/4 teaspoon minced garlic |
3/4 teaspoon italian seasoning |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
Directions:
1. Preheat oven to 350 degrees. 2. In a large bowl, combine all ingredients except for the Fiber One, and stir until completely mixed. 3. In a food processor or blender, grind Fiber One to a breadcrumb-like consistency. Add Fiber One crumbs to the large bowl and mix until integrated. 4. Prepare a baking sheet by lightly spraying it with nonstick spray. Scoop out about 1 tablespoons of the mixture, form it into a ball with your hands, and place it on the baking sheet. Repeat with the rest of the mixture, yielding a total of about 18 balls. 5. Bake in the oven for 20 minutes. Allow to cool slightly, and then have a ball (or several)! |
